Tropical Fruit with Honey-Lime Dressing



For the salad:
  • 1 cantaloupe
  • 1 small papaya
  • 2 mangoes
  • 2 kiwifruits
  • Zest of 1 lemon, cut into long julienne strips
  • Zest of 1 lime, cut into long julienne strips

For the dressing:
  • 2 TBS. limejuice
  • 1 TBS. honey
  • 1 tsp. Dijon mustard
  • ¼ tsp. salt
  • 1/8 tsp. white pepper
  • ¼ cup vegetable oil

To make the dressing, whisk together the lime juice, honey, mustard, salt and white pepper until the honey dissolves. Slowly add the oil, whisking constantly, until the dressing is thick and emulsified. Cover and chill until serving.

Cut or ball the cantaloupe. Thickly cut the papaya, mango and kiwifruit. Combine together, and chill well, at least 2 hours.

Just before serving, pour the dressing over the fruit and stir gently to coat. Garnish with the lemon and lime strips.
