ok I seriously made this cheese in April cuz I bought the kit from the beer making store in February. I put herbs de provence in mine but its consistency was much harder than I liked. I am gonna make it again today for lasagna thanks for the inspo... but do you leave some whey there or do you soak it in whey so it doesn't get so hard? I know I am not in your club, but hope you don't mind a friendly voyeur!
