Spring Mix 1 cup pumpkin seeds
1 head romaine, chopped 2 cups watermelon chunks
3 avocados, sliced thin 2 cups Parmesan cheese, shaved
Arrange lettuce and spring mix on a plate. Add the watermelon and avocado, pumpkin seeds. Drizzle with dressing.
¼ cup vinegar (any gourmet flavor is good) 1 tsp. Dijon mustard
½ cup oil (any gourmet flavor is good) 2 tsp. Honey
Salt and pepper to taste
Blend all ingredients together in a blender - except oil-then add the oil slowly while blending.
